This keto eggnog recipe is sweet and creamy, and totally hard-to-believe that it’s low carb! Serve the sugar-free eggnog with bourbon for an extra-special keto cocktail, otherwise serve it all on it’s own for a kid-friendly treat. It truly doesn’t need anything. Try this low carb eggnog as a rich, but still light, dessert or after dinner drink alongside garlic butter prime rib, green beans almondine, and mashed cauliflower (and keto fudge for dessert) It’s the perfect holiday meal!
How To Make Keto Eggnog
The process for how to make sugar-free eggnog is very similar to the regular kind – we just use a better sweetener.
Mix yolks and sweetener. Beat yolks with a hand mixer, until light yellow. Add Besti Powdered Monk Fruit Allulose Blend a little bit at a time, until completely dissolved.
Heat spiced milk. In a saucepan, stir together almond milk, cream, cinnamon, and nutmeg. Bring to a gentle boil, stirring occasionally. Once it reaches a boil, remove from heat and stir in vanilla.
Temper egg yolk mixture. While whisking, slowly pour hot spiced milk into egg yolks bowl in a thin stream.
TIP: Be sure to pour slowly and whisk constantly. This prevents the eggs from scrambling.
Heat eggnog. Pour mixture back into saucepan and heat, whisking constantly, until it thickens slightly, or reaches 160 degrees F.
TIP: Use a thermometer to check the temperature if you have one. A candy thermometer works great, but I just use a quality meat thermometer – it just has to go that low.
Add bourbon. This is completely optional, but if you will be adding it, now is the time. Chill. Transfer eggnog into a glass pitcher or jar, and refrigerate until cold. (The large cup from this set is a convenient size!)
Serve. Don’t forget a sprinkle of cinnamon and/or nutmeg!
Or for a more dessert-like feel, add sugar-free whipped cream, too!
Is homemade eggnog better?
Yes, of course it is! 😉 While store-bought eggnog can be thick and overly sweet, homemade eggnog is light, creamy, and super flavorful. It’s a holiday-must! Plus, you can make it sugar-free.
Is eggnog keto?
Regular eggnog is not keto – it has over 20 carbs. This keto friendly eggnog recipe is obviously keto, and has just 2.5 net carbs per serving. And, it tastes just like the real deal, so it’s hard to tell the difference.
Is store bought eggnog keto?
No! Well, I suppose I should say, probably not. Unless you are finding a keto eggnog at the store, but I am not familiar with any. Better to make your own, plus it tastes better!
Can I use a different sweetener?
You need to use a powdered sweetener for this recipe, and it needs to be one that won’t crystallize, so it can’t contain erythritol in the ingredients. I recommend Besti Powdered Monk Fruit Allulose Blend, but you could also use powdered allulose. I don’t recommend using any other sweeteners, because they will crystallize in the fridge when you chill your eggnog. Yes, you can make eggnog a few days in advance.
How to store low carb keto eggnog:
Store the eggnog in the refrigerator for 2-3 days. If you add bourbon (at least 5% by volume), it will last up to 2-3 weeks.
Can you freeze this sugar free eggnog recipe?
Yes, you can freeze eggnog for up to 6 months. Just make sure to leave room in the container, as it will expand when it freezes.
