We are addicted to puff pastry pinwheels in my house.  They are such an easy snack to have on hand and freeze well for later.   I generally default to making easy pizza pinwheels, but I’ve recently fallen in love with these Spinach and Feta Pinwheels.  Spinach and feta is such a classic mix (hello Spanakopita) and it’s absolutely hard to resist. These spinach and feta scrolls would be perfect to serve as appetisers to guests and you can make them ahead of time and simply reheat to make things even easier.   You could certainly go to the effort of making your own puff pastry but I don’t.  Frozen puff pastry is a wonderful invention and I keep my freezer stocked at all times to make a quick batch of these or even some apple turnovers.  Cook your pinwheels in the oven or the air fryer - either works and I’ve included both instructions below.

INGREDIENTS

One thing I love about pinwheels is that you can put them together without the need for an endless list of ingredients.  Here’s what you’ll need to have on hand to whip them up (full measurements in the printable recipe card below)… 

Puff PastryOlive OilGarlicBaby SpinachFeta Cheese {preferably Greek}Parmesan CheeseSalt + Pepper

Tip - If you’re making these pinwheels as an appetiser and want a more elegant look, simply whisk an egg in a bowl and use a pastry brush to lightly brush the outside of each scroll before baking.  This will give them a more golden look. 

INSTRUCTIONS

OVEN INSTRUCTIONS

Preheat the oven to 180C / 350F. Heat oil in skillet pan on medium heat.  Add garlic and sauté for 30 seconds.  Add spinach and sauté until wilted.  Remove pan from heat, season spinach with salt and pepper and allow to cool slightly (photo 1 above).     Lay out puff pastry sheet on a clean and flat surface.  Spread cooked spinach, feta and parmesan cheese evenly across the puff pastry sheet (photo 2 above). Roll the puff pastry sheet up tightly.  Use a sharp knife to cut into 12 scrolls (photo 3 above).   Place scrolls on a baking tray lined with parchment paper or silicone mat, then place in oven for 15 - 20 minutes or until golden and cooked through completely (photo 4 above).  

AIR FRYER INSTRUCTIONS

Heat oil in skillet pan on medium heat.  Add garlic and sauté for 30 seconds.  Add spinach and sauté until wilted.  Remove pan from heat, season spinach with salt and pepper and allow to cool slightly. Lay out puff pastry sheet on a clean and flat surface.  Spread cooked spinach, feta and parmesan cheese evenly across the puff pastry sheet.  Roll the puff pastry sheet up tightly.  Use a sharp knife to cut into 12 scrolls. Place scrolls in the air fryer basket, then cook on 180C / 350F for 15 minutes or until golden and cooked through. 

HOW TO STORE PINWHEELS

Once pinwheels are cooled completely, store in an airtight container in the fridge for 2 days, or in the freezer for up to 2 months.  

HOW TO REHEAT PINWHEELS

Set oven to 180C /350F.  Place frozen spinach and feta pinwheels onto a baking tray and bake for 10 minutes, or until warmed completely.   You can also reheat in the air fryer on 180C / 350F too.

TIPS FOR MAKING THIS RECIPE
