If you’re sitting there asking, “What are coddled eggs, Maya?”, you are not alone! A lot of people haven’t heard of them (I hadn’t either) and I’m about to tell you: they are one of the best-kept secrets in the low carb breakfast world.

What is a Coddled Egg?

A year ago, I had no clue. And now? Now, I have an awesome coddled egg recipe to share with you. I’m guessing you might be as intrigued as I was. Coddled eggs are similar to poached eggs in that both have a gently firm white and runny yolk. However, poached eggs and cooked by dropping the egg in water to cook them and coddled eggs are cooked in a (yup…you guessed it) coddler. That means that cooking coddled eggs is significantly easier than cooking poached eggs. And they come out both delicious and appealing to look at. Poached eggs can be hard to get “just right”, but it’s pretty simple to coddle an egg once you know how to use an egg coddler. Which means you really need to go get yourself an egg coddler, so you can follow this coddled egg recipe right away!

Finding The Best Coddled Egg Recipe

The inspiration to learn how to cook coddled eggs began in Northern Minnesota near Lake Superior, on a romantic trip with my husband. Every recipe should start with a good romance, don’t you think? We love to travel but tend to save up for European or Caribbean vacations more often than local road trips. However, a darling little bed-and-breakfast situated in the middle of the forest tempted us to change our normal plans, and it was a fabulous decision! After all, it’s why I discovered this coddled egg recipe. We spent all evening on the private deck, observing the star-studded sky and talking into the night. Which was great, truly. But that part that is truly exciting for you came in the morning. The next morning started with a delicious homemade breakfast made by the host of the B&B. And the star of the meal? You guessed it…the most amazing coddled eggs! They had a delicate, yet firm white surrounding a creamy yolk that poured out as you cut into it. Shredded cheddar cheese and fresh chives just made them that much better. Is your mouth watering yet? Coddled eggs were new to us and we were intrigued. I’m always excited to find new low carb egg recipes, especially when I find one I can pass on to you! And even more especially when they only take 5 minutes to whip up. Our hostess was happy to explain how to make coddled eggs and it’s unbelievably simple! All you need is 5 minutes or so, your favorite spices and maybe some cheese, and an egg coddler for this coddled egg recipe. After our amazing breakfast, we set out on a hike along the North Shore, starting at Gooseberry Falls. Unfortunately, that didn’t turn out quite as planned. I’d researched the hike in advance, and the idea was leave our car in one place, take a shuttle to another, and then hike back to the car. It was supposed to be incredibly scenic. But, when the shuttled dropped us off, we found out that most of the trail was closed due to some zoning changes and something about private property. Boo! We had to make the best of it, even if it meant most of our walk back to the car was along the road. We did finish the day with a couple relaxing hours in Duluth before driving back home. Despite the “hiking” fiasco, we returned home from our little retreat in the woods very relaxed… and with me thinking about coddled eggs. Even my husband, who is usually far less excited about food than I am, couldn’t stop talking about them. He kept asking if I was going to learn to make them, and when. That just tells you how good this coddled egg recipe is! Eager to replicate the coddled eggs recipe from the B&B, I ordered an egg coddler and impatiently awaited its arrival (thank goodness for Prime!). This one was the closest I could find to the one at the B&B, plus it lets you make six coddled eggs at once, which is much more convenient than one at a time.

How To Coddle An Egg

Once you’ve got the right tools and this easy coddled egg recipe, you’re all set to make a simple and delicious low carb, keto, paleo breakfast. In just 5 minutes. Good morning, beautiful!

Fill the pan with about 1/2 an inch of water and set it on the stove. Get the water to a gentle boil and then reduce to a gentle simmer. You don’t want it going crazy here; it’s very similar to making poached eggs, if you’ve done that before. If you haven’t, no worries. This is even easier! Grease the egg cups on your egg coddler. You can use coconut oil or butter or even a spray. Whatever you prefer for healthy low carb cooking is great here. Place the greased egg cups in and crack a cold egg into each cup. Not room temperature, but cold. Right from the fridge! Don’t you just love how you don’t have to plan ahead here? Sprinkle on your seasonings – some sea salt, fresh cracked pepper perhaps, maybe some chives and cheddar cheese. Cook the coddled eggs until done.

How Long To Coddle An Egg

4-5 minutes will give you runny yolks, and 5-7 minutes will make them much firmer. You get to choose here; after all, this is your (super simple) coddled egg recipe. All you do once they are done is run a knife around the inside to make them easier to come loose and serve on a plate! Bon Appetit, friends.
